Double Coconut Cashew Crunch Chocolate Chunk Blondies

Where are my coconut lovers at!? So underrated IMO. I made this recipe doubling the coconut goodness AND added extra crunch with Toasted Coconut Roasted Cashews (ate about half the container in the process bc ADDICTING). They also make for a perfect last min gift for neighbors or coworkers (mine loved them), or bring them to your party and top with some vanilla nice cream!

 

What You'll Need:

 

  • 2 cups almond flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 cup sugar
  • 1/4 cup cashew butter
  • 2 tbsp coconut oil (melted)
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • 3 tbsp almond milk

 

  • 1/4 cup shredded coconut
  • 1/2 cup chopped @karmanuts coconut cashews + extra to use on top
  • 1/4 cup chocolate chunks

Directions:

  1. Combine all dry ingredients
  2. Mix wet ingredients together until well blended 
  3. Combine wet and dry ingredients
  4. Fold in the Coconut, Cashews and Chocolate Chunks 
  5. Spread into prepared 8X10 or 9X9 pan
  6. Bake at 350 for 30 minutes or until golden
